Flag Beach, just outside Corralejo in northern Fuerteventura, is one of the Canaries' great all-rounders, a wide open bay facing Isla de Lobos that suits everyone from first-timers to advanced riders. The water is mixed, flat and welcoming inshore and choppier as you head out, and the cross-shore setup with a manageable shorebreak makes it a renowned teaching beach. The dependable North trade wind, boosted by the island's own thermal effect, blows consistently through the long season from spring into autumn, with the windiest stretch running roughly March to August. The expansive sandy beach gives ample room to set up and launch, with schools clustered along it. That popularity means it gets busy in season with lessons and rental traffic sharing the water, so stay alert for other riders and swimmers, and give the rocky sections at the margins of the bay a wide berth.

Sotavento at Playa Barca on Fuerteventura's south coast is one of Europe's flagship flat-water spots, a vast turquoise tidal lagoon backed by a wide sandy beach that draws everyone from first-timers to freestyle pros. The reliable cross-onshore NW thermal, accelerated by the island's venturi effect, blows hard through the season and peaks from roughly May to September, regularly topping 20 knots and sometimes reaching the high 30s. The lagoon fills and empties on the tide, offering mirror-flat, waist-deep water that is ideal for learning at low tide, while the open ocean side serves up chop and swell for advanced riders; note that high water can drain the lagoon entirely, so timing matters. There is huge space to rig and launch on the broad beach. It is a well-developed, school-heavy spot that gets busy in peak season, so the lagoon can be crowded with lessons. Suits all levels.

This is the legendary Sotavento lagoon at Costa Calma on Fuerteventura's south coast, a vast turquoise, waist-deep flat-water basin and one of the world's great learning and freestyle arenas. It runs on the cross-onshore NW trade, accelerated by the island, blowing reliably 20-30 knots through the main May-to-September season. The catch is the tide: the lagoon only fills for part of the month and drains at high water, so checking tide tables is essential, or you ride the open sea over the sandbank instead. A huge sandy beach gives near-endless room to rig and launch. It is a well-developed, school-heavy destination, so the lagoon gets busy in season. Mirror-flat and shallow, it suits every level, beginners most of all.
